Instant Pot Boneless Pork Ribs are tender “fall-apart” ribs that are ready in under 45 minutes. They are full of flavor and make a quick and easy rib dinner any night of the week!
This is definitely an easy, short-cut way to make ribs. So if you are looking for a rib recipe that will sit on a smoker or grill all day, this is not it. But I will direct you to this Competition Style Smoked Rib recipe if that is what you are looking for.
With this recipe you will be using your Instant Pot (aka- electric pressure cooker), which is great if you do not want to turn on your oven and heat up the house during the summer.
Country Style Ribs
Pork Ribs, spare ribs, baby back ribs, and beef ribs- all delish, but, here we are using boneless country style ribs. Which is basically a long strip on pork loin meat that can have a bone attached or not. For this recipe you will use the boneless version.
When you buy them in the store they may be called Boneless Country Style Ribs or Pork Loin Country Style Ribs. There is another “rib” called a Western Rib that is actually cut from the shoulder and is not a rib at all, I would not recommend buying this cut for this recipe.
Usually when you buy Boneless Pork Ribs they are cut into strips. However, I have bought them where they are scored and still pull out of the package in one piece. If they are only scored, cut them all the way through so you have individual “ribs”. You will want them to be roughly 5 inches long and 1 ½ inches wide.
Keeping Your Ribs Tender
You will want to make sure you look for boneless country style ribs that are slightly marbled or have some fat content. Those are the ones that will cook up “fall-apart tender”. The ones that look light pink with no fat at all can tend to dry out no matter how you cook them.

Instant Pot Boneless Pork Ribs
Equipment
Ingredients
- 2 – 2.5 lbs. Fresh boneless country style ribs look for more marbled boneless ribs, see notes. (can use frozen, however see the notes below)
- 1 Tbsp brown sugar
- 2 teaspoon kosher salt
- 1 teaspoon black pepper
- ½ teaspoon each: garlic powder & onion powder
- ¼ teaspoon smoked paprika
- cayenne pepper is optional for heat
- 1 cups water
- 2 tablespoon Worcestershire sauce
- 1 ½ tablespoon cider vinegar
- 3 whole garlic cloves crushed
- BBQ Sauce your favorite brand/flavor
Instructions
- Lay the country style ribs out on a sheet pan.
- In a small bowl mix together the brown sugar, kosher salt, black pepper, garlic powder, onion powder, smoked paprika (and optional cayenne pepper). Stir well until there are no large clumps remaining.
- Sprinkle the salt & seasoning rub mixture on the ribs, coating both sides and pressing it in so it sticks.
- Pour the water, Worcestershire, and cider vinegar into the Instant Pot. Crush the garlic cloves and pop them into the liquid in the pot.
- Place the seasoned boneless ribs in the pot.
- Put the lid on and lock it in place. Turn the pressure valve to seal. Set the Instant Pot to cook on high pressure Meat/Stew mode for 18 minutes. At the end of 18 minutes do a natural release of pressure for 5 minutes, then finish with a quick release. NOTE- While the pressure is releasing PREHEAT THE OVEN TO BROIL.
- Place the cooked ribs on a sheet pan and coat one side with desired amount of your favorite BBQ sauce. Broil in the oven for 4-5 minutes. Remove the ribs from the oven, flip them to the other side, coat with BBQ sauce. Place back in the oven for 3-4 minutes.
- Enjoy your tender Instant Pot Boneless Country Style Ribs!!

I made these tonight for dinner tonight and they came out delicious. Tender and juicy and super flavorable. Many are noting their meat came out dry. I did not put my chicken on the rack in the Instapot like the picture showed. The instructions did say to do that. I let them sit for a half hour with the seasoning and then ducked them right in the sauce. While they were broiling afterwards, I thickened the sauce up for the mashed potatoes. This is going on the recipe rotation for sure!

Ohmygoodness tried these the other month and I must say i won’t make them any other way. My family asks me to make them several times a month. I never made ribs until I tried this recipe and I will never try any other rib recipe These are so tender moist and flavorful

I only made 1.5 lbs of ribs, so I downed the time in the instant pot to 13 minutes. I was out of cider vinegar, so I used Balsmic, which seemed fine. I tried a rib straight out of the instant pot when it was done and it was sooo juicy, tender and well seasoned from the seasonings listed! After broiling my ribs for 5 minutes, I went ahead and took them out. Good thing, because they’re not as juicy & tender as they were beforehand. I still say excellent recipe! Thank you!

Super impressed….had found a good price on some boneless spare ribs yesterday and thought haven’t used the instant pot in while…. thank you internet search….wasn’t going to bother with the boiler but decided to do that for the first try…. excellent!!!
Didn’t have any smoked paprika just left it out….thought we had cayenne pepper (apparently need a run to the market next time…how do you run out of cayenne) also doubled the recipe (5 lb) in a 6 Qt pot (30 min instead of 18) and now plenty for left overs.

I don’t get it. I made this recipe to the letter and the pork came out dry and flavorless. Why are we putting the seasoning in the water and then put the ribs above it where it won’t have any effect on them? I didn’t do the barbecue sauce part at the end, but we ended up dipping our meat in it anyway because the ribs were so dry. You say you want to avoid heating up the house in summer, then you heat up the oven to finish this dish off. Maybe I will take the remaining ribs and cook them for a while in the water/vinegar/worchestershire sauce/ garlic concoction and see it they come out better. Disappointing and a waste of ever more expensive meat.

Agreed. I am not sure that the fact they were above the liquid matters because it is a pressure cooker… But ours were very dry as well.

I think I figured out the issue to the dryness, when I took my ribs out of the instant pot they practically fell apart…but then I put them on to broil with a bit of sauce, and I only broiled them 3 minutes, they dried out terribly. I remember vaguely the first time I made these, I think I applied way more sauce and that perhaps protected them from drying out?! My family enjoyed the flavor but I just decided it was a little too saucy, but maybe I skimped *too* much🤷🏻♀️

The broiler shouldn’t dry them out that much. My best advice is make sure you are buying a well marbled country style rib. The ones that look just light pink all the way across are doomed to be dry no matter how you cook them.

You can hover over the servings at the top of the recipe card… change the servings to 3 people and all the measurements will change for you. Cooking time will still be the same.

I have not tested these in the slow cooker, but it looks like from other recipes that they can be done in 5 hours on high or 6-8 hours on low. Season the ribs, place a cup of bbq sauce on the bottom of the slow cooker, add the ribs, then top with another cup of bbq sauce.
