I tested these Instant Pot Boneless Pork Ribs a countless number of times to get them just right, which is “fall-apart tender”. I found that buying the right boneless country style ribs is the first step to making them super tender (read on to find out more). Once you have that down, this recipe adds all the flavor you could possibly need! They have been made thousands of time and have over 75 five star reviews.

No Instant Pot, no problem… we have cooked up SO MANY boneless ribs that we also have a great method for making them in the oven. You can check out this Oven Baked Boneless Ribs Recipe next time you are without your Instant Pot.
This is definitely an easy, short-cut way to make ribs. So if you are looking for a rib recipe that will sit on a smoker or grill all day, this is not it. But I will direct you to this Competition Style Smoked Rib recipe if that is what you are looking for.

Country Style Pork Ribs (Instant Pot) Ingredients
- Boneless Country Style Ribs – Despite the name these are not actually ribs, they are cut from the shoulder portion. But there are a few things that you want to get right when picking a country style rib; pick ones that are dark pink or reddish in color, slightly marbled or have some fat content.
- Homemade Dry Rub – this is a really simple mix of brown sugar, garlic powder, onion powder, smoked paprika, kosher salt, and black pepper. I bet you have most of these ingredients in your spice cabinet. If you happen to have a bbq dry rub that you love, you can opt for that in it’s place.
- Worcestershire Sauce – Adds a layer of flavor to the cooking liquid.
- Apple Cider Vinegar – Also adds a layer of flavor to the cooking liquid.
- Garlic Cloves – lightly infuses the boneless ribs with a garlic flavor during cooking.
- BBQ Sauce – use your favorite BBQ sauce or Homemade BBQ Sauce to finish the Country Ribs.
Recommended Equipment
With this recipe you will be using your Instant Pot (aka- electric pressure cooker), which is great if you do not want to turn on your oven and heat up the house during the summer.

We use two different Instant Pots, both are 6 quarts.

What Are Country Style Ribs?
Pork Ribs, spare ribs, baby back ribs, and beef ribs- all delish, but, here we are using boneless country style ribs. Which is basically a long strip on pork loin meat that can have a bone attached or not. For this recipe you will use the boneless version.

When you buy them in the store they may be called Boneless Country Style Ribs or Pork Loin Country Style Ribs. There is another “rib” called a Western Rib that is actually cut from the shoulder and is not a rib at all, I would not recommend buying this cut for this recipe.

Usually when you buy Boneless Pork Ribs they are cut into strips. However, I have bought them where they are scored and still pull out of the package in one piece. If they are only scored, cut them all the way through so you have individual “ribs”. You will want them to be roughly 5 inches long and 1 ½ inches wide.
Tips for Buying Boneless Pork Ribs
You will want to make sure you look for boneless country style ribs that are dark pink or reddish in color, slightly marbled or have some fat content. Those are the ones that will cook up “fall-apart tender”. The ones that look light pink with no fat at all can tend to dry out no matter how you cook them.

- 3 whole garlic cloves - crushed
- BBQ Sauce - your favorite brand/flavor or Homemade
Instructions
- Lay the country style ribs out on a sheet pan.2 – 2.5 lbs. Fresh boneless country style ribs
- In a small bowl mix together the brown sugar, kosher salt, black pepper, garlic powder, onion powder, smoked paprika (and optional cayenne pepper). Stir well until there are no large clumps remaining.1 tablespoon brown sugar, 2 teaspoon kosher salt, 1 teaspoon black pepper, ½ teaspoon each: garlic powder & onion powder, ¼ teaspoon smoked paprika, cayenne pepper is optional for heat
- Sprinkle the salt & seasoning rub mixture on the ribs, coating both sides and pressing it in so it sticks.
- Pour the water, Worcestershire, and cider vinegar into the Instant Pot. Crush the garlic cloves and pop them into the liquid in the pot.1 cups water, 2 tablespoon Worcestershire sauce, 1 ½ tablespoon cider vinegar, 3 whole garlic cloves
- Place the seasoned boneless ribs in the pot.

Recipe Tips and Notes:

Cindy Hendrix says
I tried this recipe tonight. My first time cooking ribs in my IP. The flavor was amazing and they were very tender. Just a little on the dry side. I’m not sure what I may have done wrong. Any suggestions?
Susie says
Im so sorry they were dry. That is no good! You could definitely try cooking them down in the liquid. Did you coat with BBQ sauce?
Don says
I loved the flavor for sure and made some tweaks in spices. However I though amount did not apply but thickness of meat? I used about 1.33/lb of boneless country ribs. Followed instructions to a T and WOW extremely dry.
Theresa says
How would I do 6#? Same cook time? Longer? I’m cooking for ten people.
Susie says
You should be able to cook them for the same amount of time as 2.5#’s, since they are individual strips. If it was a roast or something that gets thicker or bigger with size then you would need to increase the time.
Sandra says
My husband loved these! A keeper for sure.
Karen McGhee says
Delish! Broiling at the end makes the recipe, with or without sauce. Thanks for the recipe.
Cindy Switzer-Cacciapaglia says
I also added 2 TBS of liquid smoke to the liquid in the bottom of the instant pot…made them taste like they had been smoked all day!
Laura Ostman says
OMG!!! I took these out from oven broiler and they are so tender and yummy.
It’s now in my recipe rotation !
Thank you…
Dan says
Do you see the broil on high or low?
Susie says
I think that I would use high. My oven only has one broil setting. But keep an eye on them so the sauce doesn’t burn.
Rachel says
Even without the sauce, sooo good!
Quick question – what do you do with the liquid that remains after pressure cooking them?
Susie says
That is great!!!
I just discard it. You could also save it for a stock.
Becky says
Just made these ribs and they are fantastic! I usually overcook these ribs but this recipe using the instapot is a game changer! So tender you can cut with a fork!
Maureen says
I followed the directions exactly, and while the flavor was delicious, the meat wasn’t tender. I cooked 1.6 pounds of meat for 18 minutes as stated in the recipe. Do you think a longer cook time would make them more tender?
Susie says
Im really surprised. Did you use boneless country ribs? Did you do the 10 minute natural release? I would love to troubleshoot this with you.
Kate says
I had the same issue as Maureen. Really liked the flavor and the meat wasn’t dry, just tough. Needed a knife to cut it up. I used boneless country style ribs and followed instructions as written.
Cindy Switzer-Cacciapaglia says
This has happened to me before and I forgot to set the instant pot to high (it defaults on normal)…
Chelsey says
oh my gosh thank you. i’ve cooked this multiple times with bonesless country style pork ribs of varying sizes and they’re ALWAYS tough. I completely missed the High pressure part. Going to try this next time
Rindi says
Made these for dinner and they were quick, very tender, and delicious!!! Best recipe I’ve tried thus far!
Ilovejim says
My husband actually complemented me on these. That doesn’t happen often
Anne Clark says
Loved them! Perfect!
Banks says
Wow. This is the first time I’ve used the instant pot since we got it for Christmas. Ribs came out amazing. Great recipe and followed directions exactly. Everything came out perfect.
