Easy Snickerdoodle Muffins

Snickerdoodle Muffins are a great swap out for the snickerdoodle cookie that everyone loves. They are tender muffins coated with a a delicious cinnamon sugar topping. The nice thing about the muffin version is you can eat them for breakfast and not feel bad! Just add a cup of coffee or a glass of milk.

This snickerdoodle muffin recipe is easy to make with the help of bisquick mix. You also do not need a stand mixer or hand held mixer, it is all done by hand!

Ingredients & Supplies

Here are the items you need to grab to make these Snickerdoodle Muffins:

  • 12 cup muffin tin
  • muffin liners (paper or silicone)
  • Bisquick Baking Mix
  • sugar
  • baking powder
  • cream of tartar
  • cinnamon
  • applesauce
  • milk
  • 1 egg
  • vegetable oil
  • vanilla extract
  • butter

How To Make Snickerdoodle Muffins

Start by preheating the oven to 400 degrees. Then line a 12 cup muffin tin with paper (or silicone) liners.

In a large bowl whisk together the Bisquick, sugar, baking powder, cream of tartar, cinnamon, and nutmeg.

Tip: Spoon the bisquick into a measuring cup and then level off the top.

In a separate bowl or liquid measuring cup whisk together the applesauce, milk, egg, vegetable oil and vanilla.

Add the wet ingredients to the dry ingredients and beat vigorously (by hand) for 30 second.

Fill each muffin cup ⅔ full. Bake for 12 minutes. Remove from the oven and cool for about 10 minutes.

While the muffins cool, melt 3 tablespoon of butter in a shallow bowl and make a plate of ¼ cup sugar mixed with 1 ½ teaspoon cinnamon.

Dip the top of the muffin in the butter and then roll in the cinnamon sugar. YUM! Your Snickerdoodle Muffins are ready!

A great recipe for Snickerdoodle Muffins, just like the cookie, but in a muffin. They are tender muffins topped with cinnamon sugar. They are perfect for breakfast!

Equipment

  • 12 cup muffin tin
  • paper or silicone muffin liners

Ingredients

  • 2 cups Bisquick Baking Mix (or similar product) - spoon into measuring cup and level off.
  • ¼ cup sugar
  • 1 ½ teaspoon baking powder
  • ½ teaspoon cream of tartar
  • 1 tablespoon cinnamon
  • ½ teaspoon nutmeg
  • ½ cup applesauce
  • ¼ cup milk - preferably 2% or whole
  • 1 large egg
  • 2 tablespoon vegetable oil
  • 1 teaspoon vanilla extract

Topping

  • 3 tablespoon butter - melted
  • ¼ cup sugar
  • 1 ½ teaspoon cinnamon

Instructions

  • Add the wet ingredients to the dry ingredients and beat vigorously (just by hand with a wooden spoon) for 30 second.
  • Fill each muffin cup ⅔ full. Bake for 12 minutes until cooked through – a toothpick inserted in the center will come out clean with no raw batter.
    Remove from the oven and cool for about 10 minutes.
  • While the muffins cool, melt 3 tablespoon of butter in a shallow bowl and make a plate of ¼ cup sugar mixed with 1 ½ teaspoon cinnamon.
  • Dip the top of the muffin in the butter and then roll in the cinnamon sugar.
    YUM! Your Snickerdoodle Muffins are ready!
