Chocolate No Bake Cookies are a delicious and easy bakeless cookie. All the ingredients are cooked together on the stove top and then dropped by the spoonful into fudgy oatmeal cookies.
This recipe goes fast and you want to be ready for the next step before you get there! Prep and measure all your ingredients so they are ready to go.Prep two baking sheets lined with parchment paper and the spoon or scoop you will drop the cookies with.
No Bake Cookies
In a large pot over medium/medium-high heat bring 1 stick of butter, 2 cups of sugar, and ½ cup of milk to a boil. Boil for 2 minutes, stirring occasionally.
Turn the heat off and stir in the ¼ cup cocoa powder, ½ cup creamy peanut butter, 1 teaspoon vanilla, and 2 ½ cups quick cooking oats.Stir just until everything is mixed together.
QUICKLY drop the hot chocolate/oat mixture by the spoonful onto the parchment paper. It will slightly spread and then harden.(do this step quickly bc the mixture will set up FAST and you want to have all the cookies dropped before it sets!!!)
Let cool for about 20 minutes and they are ready to eat.
Storing
Store in an air tight container at room temp. for up to 5 days.
