Add all the ingredients to a bowl and toss with tongs.
2 cups angel hair slaw, ⅓ cup red onion, ½ cup dill pickles, 1 tablespoon jalapeno, 2 tablespoon pickle juice, 1 tablespoon olive oil, ¼ teaspoon kosher salt
This is best used right away. It will get soggy if it sits too long.
Notes
You can buy "angel hair slaw" pre made at the grocery store near other slaw mixes. It is very finely cut cabbage. If you can't find it pre-cut you can easily do this on your own. Buy a small head of green cabbage. Either with a sharp knife or a mandoline slicer set on ⅛ inch, shred the cabbage.
Rinse your sliced red onion to make the flavor more mild.
Choose your level of jalapeno heat. For mild only use the outer green parts. For medium heat add the white pith/ribs inside the jalapeno. For the maximum heat use the seeds too.
