Grilled Chicken Kabobs with Mango Jalapeno BBQ Sauce
Deliciously grilled chicken kabobs are slathered in a sweet and spicy Mango Jalapeno BBQ Sauce. This is an easy chicken dinner to prepare for a weeknight. It also makes a great entertaining dinner. For easy prep the Mango Jalapeno BBQ Sauce can be made in advance and refrigerated up to 3 days, until you are ready to grill the chicken kabobs!
Place all the ingredients for the sauce into a food processor or powerful blender. Blend until all the ingredients are pureed, about 1 minute.Pour into a sauce pot and simmer over low heat for 20 minutes, stirring occasionally.Divide the sauce- Use ⅓-1/2 cup of the sauce for glazing the chicken on the grill. Keep the remaining sauce seperate for serving.
Grilled Chicken Skewers
Place the cut and seasoned chicken onto 4-5 skewers. If you are using wooden skewers make sure to soak them in water for 20 minutes so they do not burn on the grill.
Prepare your grill with a high heat side and an indirect heat side by placing the charcoal all on one side of the grill.
Grill the first side of the chicken skewers over the direct heat for about 5 minutes. Flip the skewers to cook the second side over the direct heat for an additional 5 minutes. Brush the already cooked side generously with the Mango Jalapeno BBQ Sauce. Then flip the chicken one more time onto the indirect heat side of the grill. Brush the second side generously with the Mango Jalapeno BBQ Sauce. Cook for an additional 1-2 minutes on the indirect heat. (By doing this you are preventing the BBQ sauce from burning on the grill)
Remove the chicken skewers from the heat and let them rest, uncovered, for about 3-5 minutes before serving.
Serving
Used the extra Mango Jalapeno BBQ Sauce for serving by either adding extra sauce to the skewers or placing it in a serving container for the table. You can serve the grilled chicken on the skewers or pull the chicken off the skewer. It is completely up to personal preference.
