Prep Time: 10 Min

3 lbs. Sweet Potatoes 3 Tbsp Olive Oil 1 Small Head of Garlic 1 Tbsp Brown Sugar 4 Tbsp Salted Butter 1 Tbsp Milk 2 tsp Balsamic Vinegar 1 tsp Kosher Salt

Cook Time: 35 Min

Step 1

Prep The Potatoes. Cut the sweet potatoes in half and place them on a baking sheet, cut side up. Drizzle with 3 Tbsp Olive Oil.

Step 2

Prep the garlic. Cut the top off the head of garlic. Place in a piece of foil and drizzle with a little olive oil. Close the foil around the garlic. Place on the baking sheet with the potatoes.

Step 3

Roast the potatoes at 400 degrees for 35 minutes, flipping half way through.

Step 4

Mash together the roasted sweet potatoes, roasted garlic, brown sugar, butter, milk, balsamic vinegar and kosher salt.
