Spray a large mug with cooking spray (could also use a bowl).
Crack 2 eggs into the mug and whisk them with a fork. Season with a little salt and pepper.
Microwave for 30 seconds. Give the eggs a light stir. Microwave for another 30 seconds. Stir.
Pro Tip: if there is a little liquid left in your egg/mug let it sit for about 30 seconds and the residual heat will cook it up perfectly, without overcooking!
Time to eat!
Notes
Doubling (3-4 eggs): Make sure that you have a large mug or bowl and the eggs do not fill it past half way. Microwave for 30 seconds, stir, microwave another 30 seconds, stir, and then you will probably need to add another 20 minutes to cook through.Variations:
Top with a little cheese for the last 30 seconds.
Add a few dashes of hot sauce (Tabasco) when you add the salt and pepper.
Finish with a few chopped green onions.
Stir in diced ham or cooked bacon at the beginning.
Add your microwave scrambled egg to a breakfast sandwich.
