Dutch Oven Beef Stew

A dutch oven beef stew that is simple to put together and then is slow cooked in the oven for 5 hours. It has cooked all day flavor, tender beef & perfectly cooked vegetables in a thick tomato based sauce. This makes an excellent dinner.

Ingredients

  • 1.5 lbs (1-1.5 lbs.) beef stew meat
  • 2 cup russet potatoes, peeled and diced into 1.5 inch chunks
  • 1 cup celery, chopped
  • 1 1/2 cups carrots, peeled and cut
  • 1 large onion, chopped into 1 inch chunks
  • 2 bay leaves
  • 3 cups tomato juice
  • 2 tbsp tapioca pearls
  • 2 tbsp sugar
  • 2 tbsp worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp chili powder
  • 1/4 tsp smoked paprika optional**

Instructions

  • Mix all the ingredients together in a dutch oven and place in the oven, covered with the lid, at 250 degrees for 5 hours.
    Stir the pot 2 times during cooking.
    Remove the bay leaves before serving.
