Mexican Street Corn Salad

When you need a side dish for a Mexican dinner that isn’t beans and rice, this is the perfect recipe! It also makes a great appetizer with tortilla chips.

Corn on the cob Cilantro Cotija cheese Lime Mayonnaise Sour cream Chipotle pepper chili powder Garlic  Sugar

Grill the corn on the cob on your grill. Or, if that's not available, it's going to work just fine in a cast iron pan. 

Let the cob cool before cutting off the corn with a sharp knife, into a bowl. 

Whisk together the ingredients into a mixing bowl. 

Combine the roasted corn with the homemade dressing in a mixing bowl. Stir in the cheese and cilantro added.
