Season both sides of the chuck roast with salt, pepper and onion powder.
Sear the chuck roast on both sides, in the Instant Pot on sauté mode.
Lightly sauté the onions and celery.
Deglaze the pot with beef broth, add the seasonings and herbs.
Add the roast back to the pot and cook 20 mins per pound.
After the roast cooks, remove from the pot. Then add the veggies and cook for 5 minutes.
Strain the solids from the gravy liquid.
Add the liquid to the Instnat Pot and sauté with a flour/butter mixture until it is thickened.
Serve your tender Pot Roast with the potatoes, carrots and mushrooms, drizzled with gravy.
