Super Stuffed Peppers with Ground Beef

These bell peppers are filled to the brim, making a hearty dinner. The peppers bake to perfection, they soften slightly and the filling is warm and cheesy.

Bell peppers Ground beef Onion Salt Tomato paste Garlic Taco seasoning Rotel tomatoes Green chiles Pinto beans Onion powder Chili powder Cooked rice Monterrey Jack Cheese Non stick spray

Prepare the ground beef filling with diced onions, sauteing them in a skillet. Then add in the tomato paste with seasonings. 

Stir in the pinto beans and cheese, then scoop it into the cleaned and hollowed out the peppers. 

Once the peppers have baked for 30 minutes, add the shredded cheese to the top and allow them to bake another 10 minutes as the cheese melts. 

Feel free to prepare these in advance and refrigerate them until you're ready to bake and serve.
