Salmon Burgers with Lemon Caper Mayo

There is a perfect mixture of small salmon pieces, ground salmon, and panade to keep these burgers moist. The burger itself is full of flavor, but we take it to the next level and top it off with a delicious lemon caper mayo when serving.
Ritz crackers
Fresh dill
Garlic
Lemon zest
Onion powder
Lemon zest
Salt, pepper
Mayo
Capers
Red onions
Fresh lemon juice
Dijon mustard

Using your food processor, add the Ritz crackers and seasonings to make a flavorful breadcrumbs mixture.
Add the wet ingredients to the cracker blend.
Blend small batches of fish in the food processor so its easy to combine with the panade.
Once the panade and fish are combined, form patties and add them to parchment paper so you can let them chill in the fridge for about 30 minutes.
Spray the patties with non-stick spray and then grill them about 3 minutes each side, until they reach 145F.
