Creamy Chicken Poblano Soup

A really delicious and hearty soup with layers and layers of flavor from the roasted poblanos, pepper jack cheese, corn, tender potatoes, cream and spices!

Ingredients

Roast the poblanos under the broiler.

Put the hot peppers in a covered bowl. The steam will separate the skin from the peppers.

Peel the skin and remove the seeds and stem from the roasted poblanos

Chop the remaining peppers.

Saute the onions in the butter and oil. Add the garlic and flour to make a roux.

Whisk in the chicken broth. Add the potatoes and kosher salt. Simmer until potatoes are softened.

Add the roasted poblanos, chicken, corn, heavy cream, and spices. Melt in pepper jack cheese and finish with fresh cilantro.

Time to eat! Top the soup with tortilla strips, sour cream, and cilantro.
