Father’s Day is this Sunday!! A day to appreciate the Fathers, Grandfathers and Father Figures in our life. This is an important day in our house. It’s a time to say thank you to John for being an amazing Dad, my best friend, the kids personal pool catapult, the perfect lawn guy, the trash taker-outer, the story reader and dream teller, the voice of reason (when I decide I can take on another project that is way above my skill level), and an amazing provider for our family…. the list could go on and on. He works SO hard and is the number one reason I am able to stay home with my babies and have Mom’s Dinner.
So thank you, John! You are a dream come true and we love you so so much!
On Sunday I am sure we will celebrate with donuts in the morning, a little pool time in the afternoon, maybe a family activity or two, and end with some mega grilling and beers. Here are some great menus to celebrate the Fathers in your life this Sunday.

“Everything” Crusted Salmon
How beautiful does this salmon look!!! I have to admit that I am not a seafood lover but my husband loves it. However, I am 100% obsessed with “everything” seasoning. This “Everything” Crusted Salmon from Platings and Pairings would make a wonderful seafood option for father’s day. Trader Joe’s even makes a pre-blended Everything But the Bagel seasoning you could use to simplify the recipe.
This dish would pair perfectly with a rice pilaf and a spinach salad.
Tuscan Lemon Chicken
When I need a recipe that is foolproof and will be a crowd pleaser I turn to Ina Garten. She has killer recipes that always turn out. This Tuscan Lemon Chicken recipe is no exception! The recipe calls for a whole chicken, flattened. I personally will not be taking the time to do that. I will just use the marinade with bone-in chicken breasts, it works just as well and is time friendly for this busy mom!
This grilled chicken goes great with a garlic mashed potato and oven roasted green beans.
